I always start my morning with personal development, affirmations and gratitude. My affirmations are super personal to me as they should be to you. 

This blog post covers ALL the details on the morning practice that has not only changed my business but my life! I cover:

Wake up and make my Mommy Juice to get my day started and energized!

READ PERSONAL DEVELOPMENT

Lately, I have been reading 3 books:

  • The 10X Rule by: Grant Cardone

  • Excellence Wins by: Horst Schulze

  • The Road Back To You by: Ian Morgan Cron and Suzanne Stabile 

Once I have had my Mommy Juice and read my personal development books, my mind is in a very positive, high functioning place. I do not look at my phone before this. I have my phone with me but I have all of my notifications turned off. The first thing I am fueling my body with is something really positive in the morning.

VISION BOARD

I open up my digital planner and go to the “Affirmations” tab. 

  • The first page within the “Affirmations” tab is my Vision Board. Since we are at the end of the year, I totally suggest to everyone to create a Vision Board. On my Vision Board, I have things like:


    BUSINESS GOALS

  • 5X Top 10 Team

  • Have 1 of my coaches in the Top 10

  • Selling my West Point House

  • Leading 5 Elite Coaches

  PERSONAL GOALS

  • Being present with my boys

  • Income goals for my family

  • Then I swipe over to what looks like a blank piece of paper (but digital) and I write out my affirmations and gratitude. I start with gratitude.

GRATITUDE

I know I use a digital planner, but the digital pen acts like a real pen and paper when I write out my gratitude and affirmations. You can use regular paper and pen. There is a mind-body connection when you sit down and write. 

  • Gratitude is saying “thank you” for the things you have. 

  • I write out 5 things that I am thankful for. Here are mine:

    • I am thankful for my healthy boys.

    • I am thankful for my supportive husband. 

    • I am thankful for a business that brings me joy.

    • I am thankful for our beautiful home to raise our boys in.

    • I am thankful for the opportunity to create true financial freedom for my family and others. 

  • Remember, these “I am thankful statements” change. These are things you are thankful for that day so it may change from day to day. It can be “I am thankful that my kids slept through the night.” Or, “I am thankful for the sun rising before me as I write these.”

  • This is a great way to start with the things you are thankful for each day. This puts you in a very positive mindset of abundance. You are looking for the beauty around you vs. complaining about things in your life.

AFFIRMATIONS

Affirmations, just like gratitude, will be very personal to you. My affirmations surround what I am working towards and the vision I have for myself personally and for my family. The thing with affirmations is you don’t want to say “we are going to”  or “I will” you need to say “I am” in all of your statements or write them down as if the goal has already been met. 

  • I am a 5X Top Ten Coach

  • I am creating other Top Ten Leaders

  • I am a kind, loving and patient Mom. 

  • I am vacationing in my family’s Lake Home.

  • I am attracting incredible leaders to me. 

  • I am earning $X amount of money per week.

PROVEN BY SCIENCE

I know it sounds crazy, but most of the affirmations I write down are happening. Science has backed that the affirmations you are writing down whether or not you know how to get there come true once you write them down every day. There is a saying “you don’t have to see the whole staircase before taking the first step” and that is what these affirmations do for you. It lets you see the goal at the top of the staircase and your brain starts moving us in the direction of those goals because that is where we are telling our brain we are going. Your brain now is working to get you to the goal you want to achieve.

Time Blocking to Avoid Overwhelm

As the new year approaches I had to share my process for one of the most common questions I get….how do you organize your day to stay present with BOTH family and business! Below is how I utilize time blocking to be a present mother and entrepreneur and how you can use it to get rid of that horrible overwhelming feeling in your life!

Every Sunday, I take out my digital planner and write everything out all my to-dos for the week. I then categorize them by type…so I had one list for my corporate job (now my own business), one list for my health and fitness business and one list for personal/ family tasks. Then I take those tasks and apply them to actual hours in my day.

Here are 5 tips that helped me use time blocking to avoid overwhelm:

TURN OFF NOTIFICATIONS

I turn off all my notifications (Instagram and Facebook) while I am in a time blocking session or with my family. When I do an Instagram story of my boys, I record the moment and then I put my phone back away. Being a present Mom and Wife is so important to me and this tip helps so much!

TALK ABOUT YOUR GOALS AND DREAMS

Talk about your goals and dreams with your spouse/ loved ones to get them more involved and understand how the time blocking process helps your future together. 

ELIMINATE TV

I do not watch tv simply because I do not have time for it. 

CHOOSE 2 IMPORTANT TIME BLOCKS

If your kids don’t stick to schedule, then just choose 2 time blocks to work. Make your 2 most important time blocks when you have the most quiet so for me that is in the morning and at night.

SLEEP MANAGEMENT

The reality is that sometimes you don’t get as much sleep as you want to. I choose my “hard.” I get woken up twice a night by William, but I still get up at 5:30 A.M. no matter what because if I don’t do my personal development and get my intentions right for the day, I am not as good of a Mom to my kids. I am more stressed and anxious. So I make the hard choice and get up early no matter what so it creates a better day for my family and I. But, some nights I will go to bed early to catch up on sleep.

Best Shrimp Tacos

I could eat these tacos every single night, they were insanely good! The best part is, they are also super easy. My inspiration was “Flavcity Shrimp Tacos with Creamy Coleslaw” but my version is easier and lower in fat. Win win!

Ingredients

  • 1-1.5 lbs shrimp (raw, peeled, thawed)

  • Seasoning mix (this is optional, we’re going to drench these shrimp in salsa anyway)

  • Your favorite jared salsa (I used Frontera Jalapeno Cilantro Salsa. Look for clean ingredients and low sodium, watch out for added sugars and flavorings)

  • Tortillas (I used Siete Cassava Tortillas as a grain-free option)

Cilantro Lime Slaw

  • ~8-10 oz cabbage mix (I used a premixed bag)

  • 3/4 cup 0% yogurt (I used Greek but regular should work)

  • 1 tbs Coconut Aminos

  • 1/2 tbs rice wine vinegar

  • Juice from 1 lime (or 1-2 tbs juice, I also added 2 scoops of my lime powder!)

  • A hit of heat (I used a habanero hot sauce but try Siracha or ground cayenne pepper too)

Directions

  1. Spice up the shrimp (this can be done right before cooking or 2-3 hrs ahead of time)

  2. Mix all the slaw ingredients together. Sample and adjust to taste!

  3. Cook shrimp in a preheated pan. 2-3 min first side, 30-60 seconds on the second. Careful not to overcook. Make sure you’re getting a good sizzle and browning on that first side, otherwise turn up the heat!

  4. Remove the shrimp to a cutting board. Deglaze your pan then add 1 cup of your salsa on low heat to reduce to a thick consistency.

  5. Now is the perfect time to chop your shrimp and start toasting up some tortillas!

  6. Return shrimp to pan and toss in salsa.

  7. Make some tacos!

I served mine with a side of guacamole and arbol chili salsa, yum!

Favorite New Baby Finds

I am having the best time shopping for baby boy #2! It is so nice to know we don’t need a ton of new things for him but can pick and choose a few nice new pieces!

I have fallen in love with our gowns, hats, and swaddles from Lou Lou & Co ! They are so soft, stretchy, lightweight, and I can’t wait to cuddle our new little man in them!

We loved our DockATot for Sam and although extremely convenient it was not the miracle sleep solution we were looking for….umm Sam still struggles to sleep through the night and didn’t consistently until 17 months! So after so many friends raving about this bassinet that actually responds to babies cues I had to try it! It was created by Dr. Harvey Karp (The 5 S’s, Happiest Baby on the Block) and while an investment, I will pay anything for a baby that sleeps!

And although we purchased this for Sam in hopes of him sleeping in longer, YES it is working, we will also be purchasing another Hatch for the baby! It is a nightlight, white noise, and wait to wake clock all in one! You can control the type of white noise, the color and brightness of the light, and the wait to wake schedule all from your phone! Yay for a soft nightlight to change diapers by when the new little man arrives! And all in one….thank you from this traveling mama!

Pulled Chicken Salsa Verde Soup

We used to have this recipe in heavy rotation and somehow got away from it. With the cold weather swooping in it was time to revive this super simple and delicious dish!

I will detail some options here (and probably over complicate things) but the real beauty is the simplicity of this one. Find a tasty and clean salsa verde and the hard work is done (can be more difficult than it sounds! As always, watch out for the sodium! You can always make this from scratch as well but that’s another recipe for another day!). Simply combine the salsa, chicken broth, beans, and meat from a rotisserie chicken in a pot, simmer for 10 min and enjoy! Surprisingly satisfying for such a simple meal.  

Ingredients 

  • 32 oz unsalted chicken broth

  • 16 oz salsa verde

  • 15 oz can cannellini beans (rinsed)

  • Meat from 1 rotisserie chicken*

  • 1 tsp cumin

  • 1/2 tsp coriander

  • 1 lime

  • 1/4 cup fresh chopped cilantro plus extra for garnish

  • Non-fat Greek yogurt (stand-in for sour cream) for garnish

Directions

  • Combine the broth, salsa, beans, chicken, juice from 1 lime, and spices in a large pot, simmer for 10-20 minutes

  • Serve and garnish to taste with Greek yogurt, fresh cilantro, extra lime

*I have one optional bonus step and one alternative method in case you’re feeling fancy!

  1. Broth: If you have an extra hour and want to put the full chicken to good use, use the carcass to jazz up the broth…

    • Start by adding only the 32 oz of chicken broth to your large pot

    • Add the chicken carcass and any other leftover bones/meat

    • Spice it up a bit, add what you have available; a few bay leaves, a few black peppercorns, some parsley sprigs, clove or 2 smashed garlic, thyme, course chopped carrots

    • Simmer for an hour or as long as you have, then strain out all the solids using a fine mesh strainer

    • Return the broth to the pot and proceed with the rest of the recipe

  2. Chicken: If you prefer to cook your own chicken…

    • Add the broth, salsa, and spices to your large pot and bring to a simmer

    • Add 2-3 chicken breasts and simmer for about 15 minutes or until the chicken is cooked through and shreds easily with a fork

    • Remove the chicken to a cutting board and shred using 2 forks

    • Return meat to the pot and proceed with the rest

Thai Peanut Chicken Ramen

So you guys all know that David is the cook in our family and always making us delicious meals! Well exciting news, David is going to be joining me on this little blog and blogging all of our favorite recipes! Check out this one which we may have had TWO WEEKS in a row, haha….so good!

Looking for recipes I stumbled on this great cooking blog, Half Baked Harvest and her 30 Minute Thai Peanut Chicken Ramen. Her post is great, with pictures and video, so check it out for any additional “how-to.” However, we did need to make a few adjustments and additions to clean it up a bit for meal plan and make it our own.

Meal Plan Adjustments/Tips

  • Watch the salt! Always use UNSALTED broths, you can always add salt to taste if you really want to. We used Unsalted Progresso Chicken Broth for this recipe, that brings the sodium in 1 cup down from 860mg(!!!) to ZERO.

  • Watch the salt, even in noodles! I was shocked to find that the authentic Hakubaku Organic Ramen Noodles I bought have 885mg of sodium per serving!! The ubiquitous (and cheap) Maruchan Ramen Noodles (without seasoning) have only 220mg per block.

  • Keep the flavor, drop the fat, use lite coconut milk. Yes, full fat will make the soup extra rich and delicious but the difference is hardly noticeable. Thai Kitchen regular coconut milk has 10g of fat per 1/3cup (that’s 50% of the typical 2000 calorie measurement!!))!! Lite has only 4g and 1/3 of the sodium.

  • Reduce or drop the honey. You can always add a little in at serving if you feel it’s missing. Or you can get some sweetness from other toppings like Siracha which has some sugar.

  • Personally I love a soft boiled egg in my Ramen. Personal preference, as pictured, is a 6 minute and 30 second egg. If you like a fully cooked white and slightly cooked yoke go for 7 min, extra soft go for 6.

    • Boil enough water to cover your eggs and bring to a low simmer.

    • Fill a bowl with ice water

    • Gently add eggs using a slotted spoon

    • Simmer to timer exactly (6 min 30 sec), remove and place directly in ice water

    • Gently peel and place in a small ziplock or bowl

    • OPTIONAL: Add a marinade of 1 tbs light sodium soy sauce, 1 tbs mirin (a sweet rice wine), 4 tbs water. Refrigerate over night.

    • Serve or refrigerate up to 3 days. To reheat, simmer in water for 1 min.

Ingredients

  • 4 cups UNSALTED chicken broth

  • 1 can (14 ounce) LITE coconut milk

  • 1/4 cup low sodium soy sauce

  • 2 tablespoons fish sauce

  • 0-2 tablespoons honey

  • 1/3 cup creamy peanut butter

  • 1/4 cup Thai red curry paste

  • 3/4 pound boneless, skinless chicken breasts

  • 8 ounces cremini (baby bella) mushrooms, sliced

  • 2 red peppers, chopped

  • 1 inch fresh ginger, grated

  • 1 clove garlic, minced or grated

  • 2-4 squares ramen noodles

  • juice of 1 lime

  • 3 cups fresh baby spinach

  • 1/3 cup fresh basil or cilantro, roughly chopped, plus more for serving

  • chopped peanuts, toasted sesame seeds, soft boiled egg, and/or toasted sesame oil, for serving

Directions

  1. In a large soup pot, combine the chicken broth, coconut milk, soy sauce, fish sauce, honey, peanut butter, and curry paste. Add the chicken, mushrooms, red peppers, ginger, and garlic. Set over medium heat on the stove and bring to a simmer, reduce the heat to medium-low and simmer 15 minutes or until the chicken is cooked through and shreds easily.

  2. Bring a pot of water to boil. Wait to add the noodles as they will cook very quickly.

  3. Once done cooking, shred the chicken.

  4. Bring the soup to a boil over high heat. Stir in the lime juice, spinach, and cilantro. Let sit 5 minutes.

  5. Meanwhile, add noodles to water and cook to package directions. 3 minutes if using Maruchan. Strain and add noodles to each serving bowl.

  6. Ladle the soup over noodles and top as desired!

Chicken Parmesan

With fall whether coming in and this baby LOVING anything with cheese, David and I decided to try a ‘clean’ version on the classic chicken parmesan!

TIP: Chicken breasts tend to be so huge these days so I find that using 2, halving them and pounding them to 1/2" thickness was more than enough for the 3 of us. The amount of ingredients is not super important in this recipe since it's mostly for "breading" the chicken. I halved the original recipe amounts and it was just enough for the 4 pieces of chicken.

Ingredients:

  • 2 large boneless skinless chicken breasts, halved (widthwise) and pounded to 1/2" thick

  • 1/4 cup almond flour

  • 1 Tbsp cornmeal

  • 1/4 tsp paprika

  • 1/4 tsp garlic powder

  • 1/4 tsp ground black pepper

  • 1/4 tsp ground cayenne pepper

  • 1/4 tsp dried oregano leaves

  • dash of Himalayan salt

  • 1/4 tsp baking powder

  • 1 tbsp grated parmigiano cheese

  • 1/4 cup low-fat buttermilk

  • 1 large egg white

  • 3 tbsp olive oil

  • clean pasta or pizza sauce (try Grandma's Tomato Sauce Fixate recipe)

  • mozzarella cheese (shredded or thinly sliced fresh)

Directions:

  • Preheat oven to 425° F

  • Combine all dry ingredients (including the parmesan cheese), mix and spread in a shallow dish

  • Combine buttermilk and egg white and whisk to blend

  • Heat oil in a large ovenproof skillet over medium heat

  • Dip each piece of chicken in the buttermilk mixture then dredge in the dry mix

  • Add to hot skillet and cook each side until golden, crispy, and cooked through 5-6 minutes*

  • Add to a baking dish, cover with a few spoonfuls of tomato sauce and a slice or sprinkle of cheese

  • Bake for 5-10 minutes until cheese is melted and bubbly

*The original recipe suggests pan frying for 3-4 minutes and finishing by baking in the oven. Personally I prefer a crispier chicken so by pounding the pieces thinner, it's easier to fully cook them directly in the pan and end up with a nice crisp. If the batter is starting to burn but the chicken is not cooked through, just transfer the skillet to the oven for a few minutes until an instant read thermometer reads 165°.

Zoodles With Avocado & Pistachio Pesto

It has been a while since I had zoodles but oh my goodness after this meal they are back in rotation! This quick pesto is rich and flavorful and works great on zoodles...by the way I don't like veggies so you know it hides the veggie taste well. To make it a single-plate meal just top with a protein, in our case fresh boiled-to-order shrimp from our local Farmers Market!

Oh and Sam loved it as well!

What you'll need:

  • 1 ripe avocado

  • 1 cup (packed) fresh basil leaves

  • 1/4 cup shelled pistachios

  • 1/2 fresh lemon

  • Olive oil (about 2 tbs)

  • Salt & pepper as desired

Directions:

  • Add avocado, pistachios, basil, and lemon to a food processor and pulse a few times

  • Add little olive oil and process for a few seconds, repeat until all oil is added (or if your food processor allows, drizzle it in through the top while processing)

  • Salt and pepper to taste and one more quick pulse

  • Enjoy!

  • For an easy dish, toss with zoodles and top with a protein of your choice (shrimp, chicken, etc.)

Fresh Tomatillo & Avocado Salsa

So I am obviously taco obsessed but this salsa takes it to the next level for me! Pair it with a fish taco and it provides HUGE flavor and all 100% clean eating approved!

What you'll need:

  • 4-5 tomatillos (peeled and washed)

  • 1 jalapeno (or 1 serrano if you like more heat)

  • 1 bunch cilantro

  • 1-2 limes

  • 2 ripe avocados

Directions

  • Coarsely chop the tomatillos, jalapeno, cilantro

  • Add to food processor with fresh squeezed lime and pulse until finely diced (but not too much!)

  • Dice up the avocados, combine in bowl with the contents of the food processor and gently mix together

  • Enjoy! Or if it tastes like it's missing a little something, try adding a little garlic salt.

Cilantro Chimichurri

I am always looking for ways to spice up my summer grilling and this Chimichurri brings a bold and citrusy flavor that makes a great addition to any summer grilling! I love it with grilled flank steak or chicken breasts. It’s also super easy to make extra and keep it handy for a quick boost of flavor. It will keep for weeks and continue to infuse those delicious flavors into the olive oil!

Super easy, just mix all these ingredients together and enjoy over your flavor grilled meal! 

- 1/2 bunch cilantro, chopped

- 1-2 garlic clove(s), minced

- juice & zest, 2 limes

 - 1/2 - 1 TBS red pepper flakes

- 1/2 cup olive oil

- salt and/or black pepper to taste

Spicy Grilled Shrimp

One of the reasons I am so excited to move to South Carolina is for amazing fresh seafood! During the summer I LOVE grilled shrimp and one of my favorite ways to prepare it is in a spicy marinade! David threw together this marinade the other night and it was amazing!  The smoky spice really provide a lot of flavor but they weren't too spicy for our Sam to eat!

Ingredients: 

- 1 TBS paprika (use 1/2 smoked paprika if you can)

- 1 large clove garlic, minced

 - juice from 1/2 lemon

- bring the heat with cayanne or red pepper (we used 1/2 TBS red pepper)

- 2 TBS olive oil  

- 1-2 lbs raw peeled shrimp

Directions: 

- mix together all the marinade ingredients

- mix in shrimp and marinate 1-4 hrs

- grill high and fast for some tasty char

Fast, high on flavor, and 100% meal plan clean eating approved! I hope you enjoy them as much a we did!

Lemon Chicken & Asparagus Kabobs

If you follow David on Instagram (@SelfiesofDavid) you know he is the incredible chef in the family! And with summer being here we are for sure taking advantage of the grill! David found this recipe inspiration in an issue of Southern Living...gotta start getting into the South Carolina pirit!! I was amazed at the fresh citrus flavor in this dish and I even loved the asparagus. Amazing for a non-veggie fan!

Ingredients: 

- 1/4 cup flat leaf parsley, chopped

- 1/4 up cilantro, chopped

- 1/2 lemon, zest & juic

- 1/2 TBS dried oregano (or even better, 2 TBS fresh)

-1/2 TBS red pepper flakes

- 1 TBS hone

- 6 TBS olive oil

For the kabobs:

- about 1 1/2 lbs chick (1 1/2 in cubes for breasts or 1 in strips for thighs)

- 2 small lemon, thinly sliced

- 1 bunch asparagus, cut into 1 1/2 in pieces 

Directions: 

- mix marinade ingredients and add chicke

- marinate at least 1 h

- toss asparagus with a bit of oil and add salt/pepper to tast

- thread kabobs and gril

Tip:

- fold lemons as needed and wedge between chicken and asparagus for better hol

- adding asparagus to the kabobs looks nice but is not totally necessary, you can also just toss them on the grill, we did both

Cod with Tomatoes and Potatoes

I have been missing a nice light fish here in France, we haven't been brave enough to order from the fish counter in French! David finally learned "cabillaud" for Cod so we could make this quick satisfying (and meal plan approved) dish.

Ingredients:

  • 2 tbsp. extra-virgin olive oil

  • 3 cloves garlic, minced

  • 1 lb. potatoes, sliced into 1/4" thick rounds or 1/2" cubes

    • (Tip: Use a good boiling/stew potato like Yukon Gold, Red Bliss, or anything "new"/young)

  • 1/2 cup red wine

  • 1 14 oz. can diced tomatoes

  • 1/2 tsp. paprika (smoked or regular)

  • 1/4 tsp. freshly ground black pepper, divided

  • 1/4 tsp. crushed red pepper flakes (optional)

  • 1 1/2 lb. skinless cod fillet

  • 1 lemon, sliced in wedges

Directions

  1. In a dutch oven (or large sauce pan with a lid) heat oil over medium heat. Add garlic and potatoes and cook, stirring often with a wooden spoon, until garlic is golden brown, about 3 minutes. Add wine, tomatoes, paprika, 1/8 teaspoon of pep­per, and (if you like a little spice) red pepper flakes. Cover partially with a lid, reduce heat to medium-low and let simmer, stirring occasionally, for 18 to 20 minutes, until the potatoes are tender.

  2. Season fish with remaining 1/8 teaspoon pepper and a dash of extra paprika. Place the fish lightly on top of the potatoes and tomatoes, cover tightly, and let simmer for about 15 minutes, or until the fish flakes easily and is opaque throughout.

  3. Plate in shallow bowls, finish with a squeeze of fresh lemon, and enjoy!

Cilantro-Lime Shrimp Salad

With summer quickly approaching I am so ready for some fresh light meals! This is the first time we made this salad and it will be going on rotation! Next time I think we will grill the shrimp to give them even more flavor but for a quick weeknight meal you can't beat this one! 

Cilantro Lime Shrimp

Ingredients - Salad:

  • Fresh greens

  • Cooked & peeled shrimp *

  • 2 avocados, cut into large pieces

  • Extras to taste, here are some delicious options!

    • Sliced grape tomatoes

    • Corn

    • Diced red onion

    • Hearts of palm

    • More chopped cilantro

Ingredients - Dressing:

  • 1/4 c. extra-virgin olive oil

  • Juice from 1 fresh squeezed lime

  • 1 small clove garlic, pressed or finely minced (or 1/4 teaspoon garlic powder)

  • 1 tbsp. chopped fresh cilantro

  • 1 tsp. Dijon mustard

  • Freshly ground black pepper

Instructions:

  • Whisk together all dressing ingredients

  • Combine salad ingredients, dress, toss, enjoy!

*SHRIMP TIPS:

You can keep this a super simple dinner and use precooked frozen shrimp. They thaw in just a few minutes in a cold water bath and can be ready to serve. If you prefer them hot, thaw and throw in a hot pan for just 30 seconds with a bit of fresh lime juice. Don't worry about spicing them up, the dressing will add tons of flavor.

Or if you want to get fancy, use extra dressing as a marinade for raw shrimp up to 3 hours before cooking. Grill 2-3 minutes per side or until cooked through. Add immediately to prepared salad and serve.

Peanut Chicken

I am not sure I could follow a meal plan that didn't allow peanut butter....like I may have it several times a day, haha. 

So when David threw together this peanut chicken over whole wheat noddles I knew we had a winner! The sauce is 100% 80 Day Obsession (or 21 Day Fix) approved and feels really decadent!

Ingredients

  • 2 Tbsp. Peanut Butter

  • 1 Tsp. White Vinegar

  • Splash Lime Juice

  • Sriracha (to taste)

  • 1/2 Tsp. Toasted Sesame Oil

  • 1 Tsp. Tamari Sauce

  • 1 Tbsp. Water

Directions

1. Combine all ingredients in a bowl, stir, set aside.

2. Grill chicken and cover with sauce.

We put our chicken over a whole wheat pasta but you can also put it over a brown rice, soba noodles, or on a big salad! So easy and so delicious! The sauce will count as a tsp. on your meal plan. 

Clean Eating nachos

When I started my new program, 80 Day Obsession, I knew I was going to have to find ways to make my favorite meals but meal plan approved....and we all know 80 days is too long to go without tacos! 

So week 2 I embarked on figuring out how to make delicious, 80 Day Obsession approved, nachos...and they are everything!

The other amazing thing....almost all of this is prepped ahead of time so I can just heat and go! 

So to start I made the taco meat with a Homemade Taco Seasoning.

Ingredients:

  • 2 Tbsp. chili powder

  • 2 tsp. ground cumin

  • 1 ½ tsp. garlic powder

  • ½ tsp. onion powder

  • 1 tsp. dried oregano

  • ¼ tsp. paprika

  • ¼-½ tsp. cayenne pepper (optional)

Directions:

Mix all ingredients together in a small bowl and stire. Store in a cool, dry place for up to 6 months.

To Prepare Taco Meat: 

  1. Add 1 lb. ground beef/bison/turkey to a medium skillet over medium-high heat.

  2. Use a spatula to break up the meat as it cooks.

  3. When the meat is cooked through, sprinkle 1 ½ Tbsp. taco seasoning over meat. Add 2-3 Tbsp. water and stir to combine, adding more water as needed.

I prepare a big batch of this on the weekend and then have it ready to heat up during the week. 

Next I prepare my Homemade Tortilla Chips:

Ingredients

  • Corn Tortillas

  • Extra Virgin Olive Oil

Directions

  1. Preheat oven to 400

  2. Cut corn tortillas into chips and lightly spray with EVOO

  3. Bake at 400F for 5 minutes flip and back for another minute (watch carefully as they will burn quickly)

Then to make your nachos I top my tortilla chips with my taco meat, fresh diced tomatoes, corn, and you can add cheese or guacamole! Oh and I added greek yogurt as my sour cream and it was to die for! I literally eat these every single day! Enjoy! 

Containers: 

  • 2 small corn tortillas = 1 yellow

  • Taco Meat and greek yogurt = 1 red

  • Tomatoes/corn/lettuce = 1 green

  • Cheese or avocado = 1 blue
