Zoodles With Avocado & Pistachio Pesto

It has been a while since I had zoodles but oh my goodness after this meal they are back in rotation! This quick pesto is rich and flavorful and works great on zoodles...by the way I don't like veggies so you know it hides the veggie taste well. To make it a single-plate meal just top with a protein, in our case fresh boiled-to-order shrimp from our local Farmers Market!

Oh and Sam loved it as well!

What you'll need:

  • 1 ripe avocado

  • 1 cup (packed) fresh basil leaves

  • 1/4 cup shelled pistachios

  • 1/2 fresh lemon

  • Olive oil (about 2 tbs)

  • Salt & pepper as desired

Directions:

  • Add avocado, pistachios, basil, and lemon to a food processor and pulse a few times

  • Add little olive oil and process for a few seconds, repeat until all oil is added (or if your food processor allows, drizzle it in through the top while processing)

  • Salt and pepper to taste and one more quick pulse

  • Enjoy!

  • For an easy dish, toss with zoodles and top with a protein of your choice (shrimp, chicken, etc.)
