Cilantro-Lime Shrimp Salad

With summer quickly approaching I am so ready for some fresh light meals! This is the first time we made this salad and it will be going on rotation! Next time I think we will grill the shrimp to give them even more flavor but for a quick weeknight meal you can't beat this one! 

Cilantro Lime Shrimp

Ingredients - Salad:

  • Fresh greens

  • Cooked & peeled shrimp *

  • 2 avocados, cut into large pieces

  • Extras to taste, here are some delicious options!

    • Sliced grape tomatoes

    • Corn

    • Diced red onion

    • Hearts of palm

    • More chopped cilantro

Ingredients - Dressing:

  • 1/4 c. extra-virgin olive oil

  • Juice from 1 fresh squeezed lime

  • 1 small clove garlic, pressed or finely minced (or 1/4 teaspoon garlic powder)

  • 1 tbsp. chopped fresh cilantro

  • 1 tsp. Dijon mustard

  • Freshly ground black pepper

Instructions:

  • Whisk together all dressing ingredients

  • Combine salad ingredients, dress, toss, enjoy!

*SHRIMP TIPS:

You can keep this a super simple dinner and use precooked frozen shrimp. They thaw in just a few minutes in a cold water bath and can be ready to serve. If you prefer them hot, thaw and throw in a hot pan for just 30 seconds with a bit of fresh lime juice. Don't worry about spicing them up, the dressing will add tons of flavor.

Or if you want to get fancy, use extra dressing as a marinade for raw shrimp up to 3 hours before cooking. Grill 2-3 minutes per side or until cooked through. Add immediately to prepared salad and serve.
